A quick and easy way to have the taste of a Caesar Salad in a sandwich!

- 2 pounds boneless skinless chicken thighs see notes
- 1/2 cup Caesar dressing 1/2-1 cup, I use Cardini's brand
- 1/2 cup shredded Parmesan Cheese
- 1/4 cup fresh parsley optional; or use 1-2 teaspoons dried if you don't have fresh
- 1/2 teaspoon ground pepper
- 2 cups shredded romaine lettuce
- 4-6 hamburger buns or 12 slider buns (see notes)

- Place chicken in a 3-4 quart slow cooker with 1-2 cups of chicken broth (I just use enough to cover the amount of chicken), cover and cook on low heat for 4-6 hours or high 2-3 or until done.
- Remove chicken from cooker using a slotted spoon and drain the liquid and fat from the slow cooker. Place chicken on a cutting board and pull chicken into shreds, discarding any fat.
- Place chicken back in the slow cooker and pour dressing, Parmesan cheese, parsley, and pepper over the top. Stir until mixed. Cover and cook on high heat for 20-30 minutes or until mixture is hot.
- Spoon 1/4 cup mixture onto each slider bun if you are making sliders or more for regular sized buns. Top with extra shredded Parmesan cheese and romaine lettuce to serve.
- Serve and Enjoy!
Stacy's Notes: I always use boneless skinless chicken thighs for this (and one small package for us, probably not 2 pounds, I never check!), but I'm sure you could use b/s breasts. I just cook long enough for the meat to cook and be falling apart and easy to shred.
Also, I have never served on slider buns, but the original recipes says you can serve this on 12 sliders.
If you don't have fresh parsley, no worries, it will be fine with dried or even without.
** I think the most important thing is that since this has so few ingredients, be sure to use a good quality Caesar dressing that you like (we use the Cardini's brand) and good parmesan cheese. I don't use the Kraft green shaker for this, I use better quality shredded parmesan from the deli. It makes a difference! 🙂
