Easy side dish to go with chicken, fish or any protein. Most couscous cooks in under 5 minutes, so this is quick and easy to prepare.

Ingredients
- 1/3 cup couscous cooked according to package directions
- 1/3 cup dried cranberries
- 2/3 cup boiling water or as your package directs
- 2 tablespoons feta cheese crumbled, or to taste
- 2 teaspoons balsamic vinaigrette see notes (I use olive oil & lemon)
- salt and pepper to taste
- seasonings as desired

Instructions
- Place the couscous and cranberries in a heatproof bowl. Pour in the boiling water, and stir with a fork. Cover the bowl with plastic wrap, and set aside 5 to 10 minutes. (Or, if using couscous with other instructions on the box, follow those, but add the cranberries)
- Fluff the couscous with a fork, and fold in the feta cheese. Season to taste with balsamic vinaigrette and salt.
Recipe Notes
Stacy's Notes: I found a couple of recipes on AllRecipes, and adapted to what I had on hand. Original recipe called for cucumber, but I never use (since Tim doesn't eat cucumber). Instead of balsamic dressing, which I don't usually have on hand, I just use olive oil and lemon juice. It needs a fair amount of seasoning, be generous!
