Something a little different to make using ripe bananas (as opposed to banana bread or banana muffins!)

  1. In a mixing bowl, cream the butter and sugar. Add egg and vanilla; beat until thoroughly combined. Blend in the bananas.
  2. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well.
  3. Divide batter in half. Add cocoa to half; spread into greased 13 x 9 in x 2 inch baking pan. Spoon remaining batter over top and swirl with a knife
  4. Bake at 350 for 25 minutes or until bars test done. Cool.

Stacy's Notes - This is a very old recipe, I believe that came out of a magazine a couple of decades ago. I had not made these in a while, but was looking for something different to make using ripe bananas (normally I make this banana bread). I've made these many times, as we like the combo of chocolate and banana.

However!  These bars are  crumbly and very hard to cut evenly, so they don't make a very good presentation bar to take to a function. But they taste delicious and we eat them at home! Be sure to store any leftovers in the refrigerator, as banana bread and other banana items tend to get "tacky" and icky if left at room temperature.
