Hey y’all!
We’ve got a new menu this week, although one item is a carry-over from last week. With the death in our family and being out of town for visitation and funeral, I wasn’t able to get to the Instant Pot Chicken with Noodles. And since I still have that expensive bag of Reames egg noodles in the freezer, I’ll try to get to this one again this week. I worked two meals into the meal plan that use a bag of cole slaw. I made cole slaw to go with our ribs a couple of weeks ago and remembered yet again that making a huge batch of creamy cole slaw for the two of us is a bit of a waste. It gets too “weepy” as my mom always called it, after a couple of days and had to be tossed. And I do hate wasting food 🙁 The Skillet Lasagna was also added to the list, since we opened a jar of marinara to have for dipping our pizza quesadillas in, and I wanted to finish off that jar. So, I am trying to use up what I have!

Sunday – Pizza Quesadillas
Monday – Asian Chicken with Cabbage, steamed dumplings and probably either egg rolls or edamame, some traditional Asian sides
Tuesday – Baja Fish Tacos, chipotle sauce, baja slaw, black bean & corn salad
Wednesday – Skillet Lasagna, salad, steamed green beans
Thursday – Leftovers
Friday – Instant Pot Chicken with Noodles, biscuits, side dish
Saturday – Eat Out / Birthday Party
I will continue to try to post weekly menus here, along with any extra info and links to recipes. Hopefully, we can build a great database of resources for meal planning, menu ideas, recipes for meals, dessert & sweet recipes, Instant Pot meals, and a host of other food-related resources, both here, and on our YouTube channel.
