Hey y’all!
In the past couple of weeks, we’ve tried 3 new things in our favorite new gadget, the Instant Pot 🙂 I have *so* many more things I want to try, but for now, I thought I’d share what we tried and how it worked.
The first thing was ribs! We did ribs for Memorial Day, and they came out great! We found some ribs a couple of weeks before on a great sale at Kroger, and bought 4 slabs of baby back pork ribs. They all went into the freezer, and we did one rack as a “trial run” on Memorial Day. I’m happy to report that we have the other three still in the freezer, and now I know how I’ll be doing them — in the Instant Pot to steam, then onto the grill or oven, to crisp up and have the sauce on them.

The second thing I tried was potato salad, to go with the ribs, of course! I’ve always, always made potato salad by boiling the eggs in one saucepan on the stove, while I boiled potatoes in another pot. And most of the time, I get busy doing something else in the kitchen, and my potatoes end up boiling over on the stove, and then I have that starchy liquid to clean up from my cooktop. Cooking them in the IP alleviated that problem! It worked great, and I will definitely do this again!

The third thing we’ve tried recently is a Taco Pie! I’ve done something very similar in the oven, but I liked the idea of trying it in the Instant Pot. I had recently bought a small springform pan at my local HomeGoods (a seven inch, I believe), so that I could make cheesecakes in the IP. Tim has been fussing about me baking “too much”, so I put the cheesecake plans on hold. Instead, I tried a taco pie in that pan. And it was good! It was gooey and didn’t cut very pretty, but it tasted so so good!
