A favorite from my childhood, whenever my sweet mom would make this rice casserole!

Ingredients
- 1/2 stick butter
- 1 small onion diced
- 1/2 cup raw white rice
- 1 can beef consomme or French Onion Soup
- 1 small can sliced mushrooms WITH liquid

Instructions
- Brown the onion in the margarine.
- Add all ingredients in a covered, greased baking dish (I use a sprayed, glass 8x8 pyrex baking dish covered with foil) and bake at 350 for one hour, or until rice is done.
