A recipe from my sister Gail for an easy banana bread, using Bisquick and pantry ingredients. I toss ripe bananas in the freezer in a ziploc bag, so I always have bananas on hand to make this bread!

Ingredients
- 1/3 cup canola oil or vegetable oil
- 1 1/2 cup mashed bananas about 3 large bananas
- 1/2 teaspoon vanilla
- 2 1/3 cups Bisquick baking mix
- 1 cup sugar
- 1/2 cup chopped nuts optional (we like pecans or walnuts)

Instructions
- Heat oven to 350 degrees. Grease the bottom of a 9x5x3 inch loaf pan.
- Mash or mix bananas well. Stir all ingredients together and beat vigorously for 1 minute.
- Bake until toothpick inserted in center comes out clean. Check after 40-45 minutes, but it may take up to 55-60 to cook through. Cool for 5 minutes and remove from pan.
Recipe Notes
Stacy's Notes - I use canola oil, regular or reduced fat Bisquick (you should be able to use any baking mix that has baking powder or soda and salt already added to it). Sometimes I add nuts, but leave them out if taking somewhere and I think someone might have a nut allergy, it's good both ways!
