An easy crockpot recipe for red beans and rice! This recipe uses dried red kidney beans (more affordable than buying cans), and you do NOT have to soak the beans overnight! The original recipe calls for this to cook on HI in your crockpot for 5 hours, but sometimes the dried beans take 5-6 to cook in my crockpot. Also, as a personal preference, I don’t add the bell pepper and celery, but most people do. I imagine it’s a bit more authentic tasting with them added! We love this one, though, and have been making it for years, so I hope you’ll try it!

- 3 cup water
- 1 cup dried red kidney beans
- 1 cup chopped onion
- 1 cup chopped green bell pepper I omit, personal preference
- 3/4 cup chopped celery I omit, personal preference
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 3/4 teaspoon ground red pepper
- 1/2 teaspoon black pepper
- 1/2 14 oz pkg turkey, pork or beef smoked sausage thinly sliced (I cut in about 1/2 inch chunks)
- 1 bay leaf
- 5 cloves garlic minced
- 1/2 teaspoon salt
- 3 cups hot cooked long grain white rice or brown rice, your choice
- 1/4 cup chopped green onions for garnish

- Combine first 12 ingredients (water through garlic, DO NOT ADD salt) in an electric slow cooker. Cover with lid; cook on high heat for 5 hours. Discard bay leaf; stir in salt. Serve over rice and garnish with chopped green onions. Delicious with french bread on the side!
Stacy's Notes: We've made this many times and really like it! I believe the original recipe came from Southern Living magazine, but I'm not sure. I do usually make it as written, and cook on HI for 4-6 hours (usually takes 5-6 in my older crockpot). I'm sure you could cook it all day on low, since the beans do not soak beforehand and need to cook from dried. The key is to not put the salt in with the beans, you add the salt at the end.
Serve over brown or white rice (I prefer brown, but my husband likes white, and it probably does taste better!) and garnish with green onions. We usually serve with french bread and sometimes a salad. Enjoy!
I absolutely love eating Red Beans and Rice but it kills my stomach. I think I am allergic to something in it. Still, I like your recipe and I may still have to try this. I love easy recipes, lol.
