This is so easy and tastes like an easy Chicken Alfredo, great over fettucine or other noodles (or serve over rice or mashed potatoes)

Ingredients
- 4 boneless skinless chicken breasts See Notes: I just use 2 for the two of us
- additional seasonings for chicken; See Notes
- 1 envelope Good Seasons Italian salad dressing mix
- 1/2 cup water or less
- 8 ounces cream cheese softened (I use 4 oz when I cut in half)
- 1 can cream of chicken soup
- 4 ounce can mushrooms drained

Instructions
- Place chicken in a crockpot. Combine dressing mix with 1/2 cup water. Pour over chicken (See notes, I season my chicken well before pouring on the italian dressing mix). Cook on low 3 hours.
- In a bowl, mix together soup and cream cheese. Stir in mushrooms. Stir in into chicken and cook 1 more hour or until chicken is done. Serve over fettucine or egg noodles, rice or with mashed potatoes.

Stacy's Notes:
- I've been making this for at least 15 years, since it's so easy and so quick. I usually cut it in half for the two of us, but use the full amount of Italian seasoning and cream of chicken soup (sort of hard to use half a can of cream of chicken, so I just toss it all in, LOL!).
- If you don't have enough dry Italian seasoning mix, you could try adding some bottled prepared Italian salad dressing. I have never just used exclusively bottled salad dressing, so I don't know how it would turn out, but I'm guessing it would work. The dry packets are easy to find though, and not too expensive, so I always use the dry packet.
- I always cook this in my little West Bend slow cooker, but this works great in a regular crockpot. Just cook until the chicken is cooked through and ready to shred.
- The original recipe does not call for seasoning the b/s chicken breasts with anything but the dry Italian packet mixed with water, but the first time I made it (that way), I thought it was bland. So I'm always sure to season my chicken breasts well with things like onion powder, garlic powder, Mrs Dash chicken seasoning, salt and pepper (you can also add Italian seasoning, basil, oregano, a dash of red chili flakes, etc)
- I've found that it is easiest to take the softened cream cheese and cream of chicken soup and mix in a separate bowl with a hand mixer, before adding to the crockpot. Then add the mushrooms (we've used sliced but I prefer the small whole ones I buy in a glass jar at Kroger).
- We serve this over a carb - fettucine (like a quick chicken alfredo) or egg noodles, but Tim likes it over mashed potatoes too. With a salad and veggie or bread, you've got a quick and easy meal!
