Small Batch Turkey Chili

From a recipe at BudgetBytes, originally to serve over sweet potatoes. Can use for sweet potatoes, potatoes, chili over hot dogs, etc

Ingredients:

1 Tbsp olive oil
1/2 lb. ground turkey
1 yellow onion
2 cloves garlic
8oz. can tomato sauce
1 Tbsp tomato paste
15oz. can kidney or black beans, drained
1 Tbsp chili powder
1/2 tsp oregano
1/2 tsp cumin
1/2 cup water (or less if you want it thick)
Salt to taste
Directions:
Add the ground turkey and olive oil to a large pot and saut? the turkey over medium heat until cooked through (about 5 minutes).

While the turkey is browning, dice the onion and mince the garlic. Add the onion and garlic to the browned turkey and continue to saut? until the onions are soft and transparent (3-5 minutes).

Drain the beans and add them to the pot along with the tomato sauce, tomato paste, chili powder, oregano, cumin, and water. Stir to combine. Allow the chili to come up to a simmer, then reduce the heat and let simmer for 15 minutes. Taste and add salt if needed.

Stacy's Note: Gail sent me this recipe - http://www.budgetbytes.com/2015/12/turkey-chili-smothered-sweet-potatoes/ and said she had done the sweet potatoes with this small batch of turkey chili. I tried it and while it was all good, Tim wasn't fond of a sweet potato with some chili as his main course. I made it again, just the chili portion, to have over hot dogs. I think it would be good on baked potatoes too, but that probably wouldn't work for Tim either. Still, it's a good size for two people. I make in my aluminum deep 2 1/2 quart saucier and it fits fine.
