Pork Chops with Apple & Onion

Adapted from a recipe I saw Al Roker make on the Today show; a good one for fall

Ingredients:

2 pork chops (or a 1 .5 lb pork tenderloin in original recipe)
1 large or 2 small apples
2/3 of a medium sized red onion
3 cloves garlic
oil
salt and pepper
1 cup apple cider (original recipe called for hard apple cider)
Directions:
Heat oil in a cast iron or metal skillet (I used my aluminum skillet) and sear the pork chops. Remove and add more oil if needed, and then add onion, garlic and apples and saute until soft. Add 1/2 to 1 cup of cider and put pork chops back in and cook until done.

Made again in October 2017. I think I forgot to season the pork chops, because it was a little blander this time (also, I used Kroger brand shelf stable apple cider, that may have had less taste). I cannot remember if I floured the pork chops the first time I made this in 2016. Next time though, be sure to season the pork chops liberally before searing!
