a really old recipe from my mom, for a congealed salad with fruit and cottage cheese. I have fond memories of this from my childhood, but others in my house will not eat this!

Ingredients:

1 box lemon jello
1 box lime jello
2 cups hot water
1 cup evaporated milk
1 large can crushed pineapple
2 cups cottage cheese
1 cup mayonnaise
Directions:
Dissolve the lemon and lime jellow in the 2 cups hot water. Let cool. Add 1 cup evaporated milk. Chill till set, then add pineapple, cottage cheese and mayo.

Note: Makes 2 dishes

Stacy's Notes - from an old recipe card from Dodie. She called it "Evelyn Thompson's Salad", so we assume she got this from a friend or neighbor. I have halved it and made in either an 8x8 or 9x9 pan. I assume her note about 2 dishes is two smaller pyrex, or this might work as written in one 9x13 dish. I usually mix everything together before letting it set, but I may be doing that wrong, since the recipe specifically says for the jello/milk mixture to set before you mix in the add-ins. Still, a fond memory from my childhood!
