In a large bowl, combine the flour, baking powder, salt and nutmeg if desired. In a small bowl, whisk the eggs, eggnog and butter; stir into dry ingredients just until moistened.
Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Yield: 1 dozen.
Stacy's Notes: Made December 2012, good! Adapted from a Taste of Home recipe for eggnog pancakes. I added the 2 tablespoons of oil to use for the waffle iron (made this on my new griddler with waffle plates, which I sprayed liberally with butter flavored cooking spray. I used Silk soy milk egg nog, and everything else the same, including a sprinkle of nutmeg (didn't measure). This made about 9 waffles (4 squares per time) in my new griddler.
