Spicy Garlic Vinaigrette

A very tart and tangy homemade vinaigrette. Good, but strong!

Ingredients:

4 garlic cloves, minced
1 1/2 tablespoons extra virgin olive oil
1 heaping tsp Spicy Mustard
2 tablespoons white wine vinegar
3 to 5 turns of a pepper grinder ( 1/4 to 1/2 tsp fresh ground black pepper to taste)
5 ounces fresh spinach
parmesan cheese, grated
Directions:
Mince 4 garlic cloves
Add garlic, Spicy Mustard, White Wine Vinegar, Pepper and Olive oil in a dish and mix well
Let rest at room temperature for an hour
Toss with spinach
Top with freshly grated parmesan

Stacy's Notes - Made March 2011 (adapted from the blog, A Southern Fairy Tale). I had bought a bag of baby spinach for salad and wanted to try a new dressing. I did use 4 fresh cloves of garlic, and everything else basically the same. I tasted it after mixed it up and it seemed heavy on the white wine vinegar, so I added a bit more olive oil, until it tasted like I wanted. This is a strong dressing, very tart and tangy. Good on the spinach though, with a few bacon bits and some shaved parmesan
