Season turkey cutlets, I think I used a salt free chicken seasoning. Heat olive oil in skillet, cook cutlets on both sides probably about 3-5 minutes per side. I did some onions as well.
Remove cutlets from pan. Add a bit more oil, salt/pepper and about a tablespoon of flour, Stir together to make sort of a roux; then add broth to pan. Stir in a spoonful or 2 of course grain mustard or dijon mustard. Cook until it starts to thicken and add cutlets/onions back to pan.
Good served with potatoes, rice or orzo with the sauce spooned over!
