Sort of like a "Hamburger Helper" type meal, taco flavor all in one skillet

Ingredients:

1 pound ground beef
1 small onion, chopped
10 corn tortillas, cut into 1-inch pieces
1 cup (8 ounces) taco sauce (or use my homemade version for taco sauce)
1 can pinto beans, drained
1 ΒΌ cups shredded cheese, divided

Directions:
In a skillet cook ground beef and onion until beef is browned and onion is tender. Drain the fat off the meat and return to the pan. Add tortilla pieces, taco sauce, and beans. Combine and cook over medium low heat until heated through. Add cheese and stir until melted. Serve and enjoy!

Stacy's Notes: Found this online at both Lynn's Kitchen Adventures website and also OrgJunkie (Monday Menu website). I made several changes - I used ground turkey rather than ground beef. I used half a medium yellow onion, a package of frozen pinto beans that I had cooked from dried and the tortillas as called for. I also made my own homemade taco sauce from the same website (and entered here as well). Next time, I might make a double batch of the taco sauce, as it was a little dry and needed more sauce (I had to add some store-bought bottled Ortega sauce I also had on hand). This was good, nothing spectacular, just comfort food. Tim liked it more than I did, he thought it was like a taco flavored "Hamburger Helper". This made a lot for the two of us, we had tons of leftovers.
