Cook onion in butter for 3 minutes.
Combine eggs, beef, crumbs, 1/4 cup chili sauce, salt, Worcestershire sauce and milk with cooked onion mixture.
Mix well. Place in greased muffin pan and spread with remaining chili sauce.
Bake in preheated 375 degree oven for 30 minutes.
Stacy's Notes - tried these Sept 09 and we liked them. I don't tend to like large loaves of meatloaf, but I do like mini-meatloaves and thought these would be good (good for my portion control issues too!). I used a package of ground deer that we had in the freezer, but will try these with regular ground beef (or chuck or sirloin) in the future. I misread the recipe and added the entire 1/2 cup chili sauce into the meat mixture. It was wet, so I probably added a bit more than 1/2 cup of plain dried bread crumbs. I just spread a little chili sauce on each muffin at the end. I would definitely do it the same way in the future, 1/2 cup into the meat mixture, as it gave it a lot of flavor. Tim liked these as well, and did not even ask for ketchup (his normal to eat with meatloaf). I baked these in my metal muffin pan (sprayed liberally with cooking spray) for 30 minutes at 375 and they were well cooked (maybe check at 25 minutes next time). Definitely a keeper (served them this time with mashed potatoes and zucchini fritters).
