ABM Buttermilk Bread

All white bread, very light and tender

Ingredients:

3/4 cup buttermilk
1/4 cup warm water (110 degrees F/45 degrees C)
1/4 cup margarine -- or butter, see notes
2 tablespoons white sugar -- or a little less
1/4 teaspoon baking soda
1 package active dry yeast -- (.25 ounce)
1 teaspoon salt
2 3/4 cups bread flour
vital wheat gluten -- see notes
Directions:
Add ingredients to your bread machine in the order the manufacturer suggests (mine does liquids, dry ingredients, yeast last). Process on the dough cycle. Take bread out, shape, knead slightly, and place into greased loaf pan. Let rise (I use the warm oven method), then bake at 350 for approximately 27-28 minutes, or until done. Shield with foil the last few minutes, if getting overly brown.

Stacy's Notes: Made Sept 2007, really good! I used all white bread flour, 1/2 stick of real butter instead of margarine. I warmed the buttermilk slightly in the microwave, and also warmed the water. I used 2 1/4 teaspoon jarred bread machine yeast, and also added about 3 teaspoons of vital wheat gluten. Really good bread, a keeper :)
