Gail's Broccoli Cheese Frittata

Ingredients:

3/4 cup egg substitute (or 3 eggs)
3 Tablespoons skim milk
1/4 t. salt
dash of cayenne pepper
2 t. canola oil
1 package (10 oz) frozen chopped broccoli, thawed and well drained
1 small onion finely chopped
1 clove garlic, crushed or chopped
2 cups low fat or part skim cheddar cheese, shredded
Directions:
Combine eggs, milk, salt and pepper; beat well and set aside.
Heat oil in 10 inch skillet. Add broccoli, onion and garlic; saute until tender. Remove from heat. Stir in egg mixture. Sprinkle with shredded cheese.

Cover and cook over low heat for 10 minutes or until egg is set and cheese is melted.

Cut into 4 wedges and serve immediately.

I used the egg substitute, skim milk, and a very low fat cheese that is a store brand I can find here. Did everything pretty much as directions stated, it may not have taken 10 minutes for mine to cook; not sure if it was because the pan was really hot or if it was because it's a new pan and cooks really well.
We both liked it. Had salad, another veggie and sourdough bread with it for supper.
