Ingredients:

1 pound carrots, scraped and cut into 1/2" thick diagonal slices -- see notes
2 tablespoons brown sugar
1 tablespoon light butter -- melted
1/4 teaspoon ground nutmeg
1/4 teaspoon vanilla extract
1/8 teaspoon salt
Directions:
Steam carrots, covered, 6 minutes or until crisp-tender. Transfer to a serving bowl, and keep warm.

Combine brown sugar and remaining 4 ingredients in a small bowl. Drizzle over carrots; toss well.

Stacy's Notes - made these Sept 2004. Sort of! I used frozen baby carrots because that was all I had on hand; next time try with a bag of fresh baby carrots. I halved the other ingredients, although I "guessed" at the nutmeg, vanilla and salt. Apparently, I added too much vanilla for Tim remarked that there was something in the taste he didn't quite like, it was too sweet. I, of course, loved them because they were sweet! Easy, I just steamed the carrots in the microwave, then tossed butter on them when they came out and mixed everything else in the dish with them. Good, make again
