Alfred said he developed this recipe after getting a turkey from work one year at Thanksgiving, and he was getting VERY tired of turkey sandwiches!

Ingredients:

1-2 lbs of shredded turkey OR 1 lb of shredded cooked ham
1 lb of link sausage (I buy lean smoked sausage at local grocers)
1 pkg of 15 bean soup
1 28oz can of diced tomatoes
1 medium-large diced onion
2 large TBsp of Cajun seasoning (I used 3 TBsp once and it was H-O-T!)
Directions:
Advance preparation: Soak the beans for 8 hours in a large stewpot.

Cooking: Ensure the beans are covered by several inches of water and cook for 2 hours in the stewpot. Add the other ingredients and cook for 30 additional mins. Add water as needed.
