ABM Whole Wheat Hamburger and Hot Dog Buns

I make these as hamburger buns to have with the French Dip I make in the crockpot - deeee-licious!

Ingredients:

1 cup water
1 egg
2 cups all-purpose flour
1 cup whole wheat flour
3/4 teaspoon salt
1/4 cup shortening
1/4 cup sugar
3 teaspoons Red Star or SAF yeast
Directions:
Place all ingredients in bread pan, select Dough setting, and Start.

When dough has risen, the machine will beep. Turn off machine and remove bread pan. Turn out dough onto a floured countertop or cutting board. Gently roll and shape dough into a 12 inch rope.

With a sharp knife, divide dough into 8 pieces for hamburger buns or 12 pieces for hot dog buns.

Grease a baking sheet. Roll pieces of dough into balls and flatten for hamburger buns or shape into 6-inch rolls for hot dog buns. Place on prepared baking sheet. Cover and let rise in warm oven 10 to 15 minutes until almost doubled. (Hint: To warm oven slightly, turn oven on Warm setting for 2 minutes, then turn it off, and place covered dough in oven to rise. Remove sheet from oven to preheat).

Preheat oven to 400 degrees. Bake 12 to 15 minutes until golden brown. Remove from oven and cool on racks. When ready to use, split buns in half horizontally. These will keep in a plastic bag in the freezer for 3 to 4 weeks.

Stacy's Notes - first made these Feb 2003 - very good! Made 6 large buns. I put them on one cookie sheet and tried the oven-rise method. Next time, put 3 each on 2 cookie sheets, as they really spread (moving them after they rise makes them deflate). Also, after taking out of the warm oven, I let them rise another 45 minutes or so (covered, in a warm spot). I baked for 12 minutes in my oven at 400ยบ.
