Ingredients:

1/2 onion -- finely chopped
2 tablespoons butter
1 cup rice -- uncooked
2 tablespoons white wine -- see notes
1 1/2 cups chicken broth
1/2 bay leaf
Directions:
Preheat oven to 375ยบ. Over medium heat, melt the butter in a small saucepan with a tight-fitting lid, and add the onion. Cook for about 3 minutes, until the onion is softened and slightly glazed.

Add the rice and stir until the rice is translucent, and add the white wine, chicken broth and the 1/2 bay leaf. Cover and place in the oven. Bake 20 minutes.

Stacy's Notes - Made this a long time ago (before I started keeping recipes on the computer!) It was good, if I remember correctly. I used white wine cooking wine instead of regular white wine. I stirred it all up on the stove, then transferred to a sprayed corningware dish to bake in the oven.
