Rich Butterscotch Bars

Ingredients:

11 ozs butterscotch chips
1/2 cup butter
2 cups graham cracker crumbs -- about 32 squares
8 ozs cream cheese -- softened
14 ozs sweetened condensed milk
1 egg
1 teaspoon vanilla
1 cup chopped pecans
Directions:
In a large microwave safe bowl, heat the chips and butter on high for 1 12/ to 2 minutes or until chips are melted, stirring every 30 seconds until smooth. Add the cracker crumbs; set aside 2/3 cup. Press the remaining crumb mixture into a greased 13x9 pan.

In a small mixing bowl, beat cream cheese until smooth. Add the milk, egg, and vanilla; mix well. Fold in the pecans. Pour mixture over the crust. Sprinkle with reserved crumb mixture.

Bake at 325 for 30-35 minutes. Cool on a wire rack. Cut into 18 bars. Store in the refrigerator.

Stacy's Notes - Made these January 2003 - very good. Tim loved these! I had trouble with my oven and probably overcooked them. Made June 2003 and watched oven and they did better. Don't let these overcook - I checked at 30 and 35 min and they didn't look done (looked "jiggly"), but they were. Go ahead and take them out, they set up well and then have to be refrigerated anyway. (I take them out at 30 minutes now.)
