Gail's Tortellini Soup

Ingredients:

4 cloves garlic -- chopped
1 tablespoon butter
1 - 28 oz can chicken broth -- or more, as pasta absorbs some
9 ounces tortellini
1/4 cup parmesan cheese
1/4 cup fresh basil -- (Note: I used 1 tablespoon dried)
1 - 10 oz box frozen spinach -- thawed and squeezed dry
1 - 14 oz can stewed tomatoes
Directions:
Precook pasta.

Saute garlic in butter, then add it to the broth. Add spinach and simmer for approximately 2 minutes. Add pasta and cheese and simmer a bit more until the pasta is very tender. Add tomatoes and basil. Simmer an additional 5 minutes. Top with additional cheese, if desired.

Gail's notes - When I made this, I used fresh baby spinach from a bag, not frozen. I also used dried basil instead of fresh. Very simple and very good.

Stacy's Notes - this is so good! I used dried tortellini from a bag (found at Walmart), dried basil and fresh spinach also. I used a can of petite diced tomatoes, since I don't like tomato :)
