Ingredients:

1 - 9 inch unbaked pastry shell
1 - 16 oz can pumpkin (about 2 cups)
1 - 14 oz can lowfat sweetened condensed milk
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Directions:
Preheat oven to 425º. In a large bowl, combine all ingredients (except pie shell) and mix well. Pour into pastry shell. Bake 15 minutes. Reduce oven temperature to 350º; bake 35-40 minutes longer or until knife inserted 1" from edge comes out clean. Cool

Garnish as desired; refrigerate leftovers.
