A favorite of mine to make in the fall and winter. :)

Ingredients:

2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 cup cranberries (washed & chopped or halved, can do in food processor) -- fresh or frozen
1/2 cup chopped nuts
1 beaten egg
3 tablespoons oil
1 cup orange juice
Directions:

Sift dry ingredients together. Add cranberries and nuts. Add beaten egg mixed with oj and oil, mix slightly. Bake in greased loaf pan @ 350 for one hour.

Stacy's Notes - made several times Fall 2002. This is not lowfat, but very good! It's very similar to the recipe on the back of the Ocean Spray cranberry bag. I chopped a little over 1 cup of cranberries in the food processor. Used 1/2 cup chopped pecans and canola oil. Definitely a keeper! :)
