I love this one but Tim is not fond of it (I think it's the raisins and apples!), so I don't make often. It doesn't keep well for more than a day or so, either.

Ingredients:

1/4 cup red wine vinegar
3 tblsp brown sugar
1 tsp. vegetable oil
1 - 10 oz bag packaged coleslaw
2 cups chopped apple
1/2 cup raisins
Directions:
Combine vinegar, brown sugar, oil and 1/4 tsp. salt in a microwave-safe bowl. Microwave at HIGH 1 minute. Add coleslaw, apple and raisins, toss well to coat. Serve chilled or at room temperature.

Stacy's Notes - Made this Feb 2004 - very good! I loved this, and Tim ate some too (although he called it a fruit salad). I used Fuji apples (diced very thinly), packaged cole slaw mix and the garlic red wine vinegar I had on hand. Definitely make this again - a real keeper! (NOTE: It was great the first day and good the second, if it doesn't bother you that it wilts a little and the apples are a bit brown)
