Ingredients:

2 cups canned black beans, rinsed and drained
2 cups cooked fresh corn
1/3 cup finely chopped red onion
1/4 cup chopped fresh cilantro
3 tablespoons fresh lime juice
1 teaspoon olive oil
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper
Directions:
Combine all ingredients, stirring well. Chill, if desired.

Stacy's Notes - made this June 2004 to go with the Baja Fish Tacos. Really good, we both enjoyed it. I used one can each of beans and corn, and halved the other ingredients (didn't use cilantro). This can be kept a day or so in the fridge before it gets soggy and icky.
