2 lbs. flounder or sole fillets
2 tablespoons lemon juice
? cup grated Parmesan cheese
? cup butter or margarine, melted
3 tablespoons mayonnaise
3 tablespoons chopped green onions
? teaspoon salt
Coat a piece of heavy-duty foil (about 14 in. x 14 in.) with nonstick cooking spray. Place fillets on foil; brush with lemon juice. Crimp foil, forming edges. Place foil flat on the grill (do not seal). Grill, covered, over medium-hot heat for 4 minutes. Combine Parmesan cheese, butter, mayonnaise, onions and salt; brush over fillets. Grill 3-4 minutes longer or until fish flakes easily with a fork.
Stacy's Notes: Found at AllRecipes and tried September 2011, to use some frozen flounder fillets I had bought. I made several changes, based on what I had on hand. I used 2 fillets that I had thawed, and just eyeballed melted butter, grated parmesan, mayo, dash salt, garlic powder and dill. I sprayed a Pyrex pan with cooking spray, placed the washed and dried fillets in there and brushed lightly with lemon juice. Topped with mayo mixture, then sprinkled with italian bread crumbs. Baked in a 400 degree oven for approximately 14 minutes. Also roasted some veggies at the same time, all very good. Make again.
