Ingredients:

4 - 4 oz fillets salmon
3 tablespoons prepared Dijon-style mustard
salt and pepper to taste
1/4 cup Italian-style dry bread crumbs
1/4 cup butter -- melted
Directions:
  1. Preheat oven to 400 degrees F (200 degrees C). Line a shallow baking pan with aluminum foil.

  2. Place salmon skin-side down on foil. Spread a thin layer of mustard on the top of each fillet, and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.

  3. Bake in a preheated oven for 15 minutes, or until salmon flakes easily with a fork.

  4. NOTE: We sometimes add minced garlic to the butter or make our own seasoned bread crumbs with whatever fresh herbs we have. :)

  5. Gail's Notes - she made Feb 2004 and liked it. She did 2 fillets for them, and didn't really measure ingredients. Used regular dijon mustard, no salt and jazzed up her plain breadcrumbs. She used tub butter and mixed in jarred garlic. Might have used more than recipe called for, she didn't measure.

  6. Stacy's Notes - made this May 2004. We really liked this. I used 2 fillets (bag from Sam's), regular Dijon mustard and canned Italian bread crumbs. I melted tub butter (Brummel & Brown) in microwave that was mixed with jarred minced garlic. This was really good. Served with mushroom brown rice mix and almond green beans.

The last time I made this I drizzled it with olive oil instead of butter/margarine. I like to "think" it's healthier, hopefully it is!
