Zucchini Pie
A great way to use fresh zucchini in the summer 😉

  2. In a large bowl, whisk the first eight ingredients (eggs, cheese, oil, herbs, garlic, s&p). Stir in the zucchini, baking mix and onion. Pour into a greased 9-in. deep-dish pie plate.
  3. Bake at 350 degrees for 25-35 minutes or until lightly browned.

Stacy’s Notes: This is great to make in the summer with fresh zucchini. Good for a Meatless Monday meal, or to go with any meat. I paired mine with some turkey sausages for my meat-loving husband! The original recipe is from Taste of Home, and I’ve added fresh chives, but basically make it as originally written.
