For the cheesy joes, I usually use turkey, although beef works great. I leave out the white vinegar and barbecue sauce from the original list of ingredients. I add a bit more mustard, worcestershire and then some ketchup in addition to the tomato sauce. Once the mixture has simmered 20 minutes, before serving, toss in as much shredded cheese as you like (I usually use colby jack or a fiesta shredded cheese, or whatever I have on hand). Serve as you would the regular sloppy joes, on buns with your choice of toppings. Note: the cheesey turkey joes are particular good on Hawaiian slider rolls or buns!
