Stacy’s Homemade Pancakes
Easy to make using common pantry ingredients

  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. (See notes, batter can be lumpy, and you can let it rest a few minutes before you start cooking, if you have time)
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Stacy’s Notes: This is an easy recipe if you don’t have Bisquick in the house, using common pantry baking ingredients.

You mix up the dry ingredients, make a well and add the wet and then just stir until combined. No need to work out all the lumps. Batter does great if you let it rest a few minutes before cooking, but not necessary.

You can use a nonstick pan or griddle, or a cast iron griddle. I always melt butter on the surface before I scoop out my batter. I use a 1/4 cup measure, and spread them out so I have plenty of room to flip them over halfway. I use a low heat for these, about medium low or even towards low.

This made about 6-8 good sized pancakes, enough for us for breakfast with 3 leftover for Tim a second morning.
