Pizza Egg Rolls
A fun way to use egg roll wrappers!

  1. Take one egg roll wrapper (be sure to keep the rest under a damp paper towel, you do not want them to dry out) and place it on a diamond shape, with one point pointing towards your body. Use a pastry brush to brush all four edges with egg wash
  2. Place a small line of pizza sauce across the middle if you want a saucy or wetter egg roll. Then place 3-4 pepperoni on top, and then a piece of mozzarella string cheese. I tried different variations – some had pizza sauce on the bottom and some had no sauce. Some had one layer of pepperoni on the bottom and one piece of cheese. Another variety was a “double decker” – pepperoni, string cheese, then another row of pepperoni. Construct them however you want!
  3. Bring the sides in over the sauce, pepperoni and cheese. Then fold up from the point towards your body over the middle, now it looks like an opened envelope. Keep rolling towards the top until you have rolled it completely, and keep the seam side down.
  4. Spray each pizza egg roll well with olive oil spray (I use a “Misto” and regular olive oil). Preheat air fryer, then cook at 350 degrees for about 8 minutes (I flipped at the 5 minute mark, sprayed well again and cooked the last 3 minutes on the second side).
  5. Serve with marinara sauce or pizza sauce for dipping.
