Overnight Breakfast Casserole
I almost always have the ingredients on hand for this one, and love to make a half portion (in an 8×8 pan) for us, or the whole thing to take to my ladies Bible study!

  1. Brown and drain one pound of breakfast sausage. I always use Jimmy Dean and it works well 🙂 See the notes, if you don’t use the spicy one, then you will need a few extra seasonings.
  2. Spray your pan with cooking spray.
  3. Layer 6 pieces of white bread (plain or toasted, your choice) on the bottom. Top with the browned & drained sausage.
  4. Sprinkle the shredded cheese on top.
  5. Beat your eggs with salt and pepper (and any additional seasonings, if desired). Add milk (or use half and half to make it richer!). Pour egg/milk mixture over the bread, sausage and cheese in your pan.
  6. Cover pan with foil and place in fridge overnight (8 hours minimum).
  7. Bake at 350 for 60 minutes (see notes, if I halve this for the two of us, it cooks in less time).

Stacy’s Notes:

If you use the regular, not spicy, Jimmy Dean sausage, then you need to add some more seasonings. I like to add some chili flakes or a dash of cayenne, definitely use some dry mustard powder (I don’t measure, but a teaspoon is probably close).  Add any seasonings to the eggs and salt & pepper,  when you whip them up with a fork.

To make this casserole a bit richer, substitute half and half for the whole milk.

I often halve this recipe and bake in an 8×8 pan for the two of us.  This cooks in about 46-48 minutes in my oven, but start checking around 40 or 45 minutes.
