Stacy’s Notes – I have been making this since 2003, and have made it several different ways. I’m convinced this is a recipe you cannot mess up! I have used different varieties of beans (canned Great Northern, Black, Kidney, Green Beans, canned and frozen lima beans, etc) I have used deer sausage, and also store-bought smoked sausage, and we much prefer the store-bought smoked link style sausage, cut into 1/2 inch slices. I usually use a turkey smoked sausage, like Healthy Choice or Ekrich, and it works great.
I have cooked this on low all day, on Hi for a few hours and then turned to low, but never just on High for a couple of hours, but I’m sure it would work. I have tried serving this over white, brown and wild rice, but Tim is not fond of it over rice, although I like it. He much prefers cornbread, so I make a pan of cornbread or Jiffy cornbread muffins for him now. 🙂
Recently, I have discovered that Kroger (and probably other places) sell a can of mixed beans, or a bean blend. At Kroger, they are labeled “Tri Bean Blend”, and so I just use 2 cans of those, since it’s just the two of us. Since I am just using 2 cans of beans, I have now cut the ketchup back to one cup, from the original 1 1/2 cups. It makes a much more manageable size for us, but still with plenty of leftovers for extra meals. I have honestly never frozen the leftovers, so I don’t know if that works or not. We just eat them for lunches or another meal until they are gone!
This is NOT gourmet by any stretch of the imagination, it’s just good, hearty, comforting food. It doesn’t look great, but it tastes fabulous!
