Creamy Guacamole

  1. Finely dice your red onion and set aside.
  2. Peel and dice avocado and add to your mixing bowl. Make it as chunky or finely diced as you like. Add a splash of fresh or bottled lemon or lime juice, to slow down discoloration and oxidation.
  3. Start with a very small amount of mayonnaise and sour cream. You can always add more but you cannot take it out! You won’t need much, the avocados themselves are very creamy.
  4. Add any other seasonings that you like – we add garlic powder, red cayenne pepper, salt and pepper, and a few dashes of hot sauce. Mix and taste to adjust your seasonings.
  5. If you need to chill it, cover the guacamole as best you can with tightly placed saran or plastic wrap – press the wrap down on the top of the guacamole and get all the air out if you can. Store in the fridge until ready to serve. If there’s a slight layer of brown on the top, simply take a spoon and remove.
  6. Serve with tortilla chips or on your favorite Tex-Mex dish. Enjoy!
