Stacy’s Notes –Â I found this recipe printed on the side of the bag of King Arthur White Whole Wheat flour that I bought. Most of the time when I make it, I use light brown sugar, semi sweet chips, untoasted walnuts and everything else the same. I mixed the wet ingredients in my Kitchen aid mixer, then mixed in the flour. I took the bowl off and stirred in the chips, cranberries and walnuts by hand. I line my cookie sheets with my Silpat liners, but if I didn’t have those, I would use parchment paper.
I made smaller cookies, using my cookie scoop, more like a teaspoon than a tablespoon. Mine made about 2 1/2 dozen cookies, at 350 for 12 minutes in my oven.
I also have made these with variations. I have subbed regular white all-purpose for the white whole-wheat. I have used dried cherries instead of cranberries. I’ve used dark chocolate chunks or chips over the semi-sweet (and I love them this way!) I’ve also used pecans instead of walnuts. Feel free to mix them up to your liking, or based on what you have on hand.
In the YouTube video we shared in January 2019, I used regular white all-purpose flour, dried cranberry bits, dark chocolate chips and chopped pecans 🙂
