Stacy’s Notes: I like to make this quick creamy sauce to serve with our Baja Fish Tacos, but it will work for most any Tex-Mex dish, or for a nice dipper for crudite.
Since I don’t like things spicy, I substitute ground chipotle pepper (powder) for the minced chipotles in adobo. You can make this as spicy or mild as you like. If you don’t have yogurt on hand, try mixing mayo with sour cream, I have done that and it works great! Also, I like to add a bit of lime juice and cumin to mine.
