Bean Soup Mix (Gifting)
I combined recipes to come up with this mixture to give as gifts in Mason jars

  1. To assemble: Use pint (or wide mouth, if you can find them) mason jars and add the ingredients in order. The individual layers of dried beans on the bottom, then the seasonings, and top with a wrapped veggie bouillon cube.
  2. Print the following instructions on a tag and include with your jar gift (Original instructions; see below for my notes and changes): Unwrap the bouillon cube. Add the bouillon cube, remaining content of the jar, 2 diced carrots, 2 diced celery stalk, 1 (14 oz) can diced tomato and 6 cups of water into a large pot. Bring to a boil over medium-high heat. Reduce the heat. Cover and simmer, until the beans are tender, about 90 minutes, adding more water as necessary. Discard the bay leaf. Season to taste and serve.

Stacy’s Notes: I combined 2 different five bean soup mixes I found online (from misswish.com and wholefully.com), but I left out the split green peas, as I don’t like them, haha!  I combined and added seasonings and came up with the above mixture.  I taste tested it before gifting to family and friends and made and included the following notes:

I left out the celery and added diced carrot and onion, as well as the can of diced tomatoes.  I used about 6 cups of water and the dried beans took 2-2.5 hours to cook on my stovetop, in a Dutch oven. I added diced ham to our soup, or I would also try browned hamburger meat.  I seasoned well with salt and pepper at the end, after the beans were soft.  This makes 4 small or lunch sized portions or two hefty meal sized portions.
