Yesterday I blogged about all the corn being grown this year in Mississippi. That corn is the kind that’s used for grain, feed, fuel, etc. and the post is here. It’s not used for eating I don’t think.
But there is a large farming operation not too far away from us that grows sweet corn, we think we’ve heard that they have a contract with some big company that buys their corn to sell in grocery stores or maybe Walmart. I bought some last year to put in my freezer and it is the BEST and sweetest corn I believe I’ve ever had in my life! They have big crews come in to hand pick it, then it’s refrigerated pretty quickly. They also crate lots of it up to sell to local people in the area that drive out into the country for it. It’s like going to the farmer’s market I suppose but right out on the farm! I was going out of town this week and would be fairly close by so I made a stop on my way home to buy a box of it to put in my freezer; about 50 ears in a box for $13, pretty good huh? I spent several hours one afternoon working on it and left out some for supper, yummy…….

It was in this box and was cool, easy to shuck and no bad places anywhere!

And I don’t think I got a good enough picture for you to tell but in the field this corn looks different than the other that’s being grown for feed. In fact, when I saw this in a field one day I had to ask hubby what it was because it didn’t look like all the other corn…..I just don’t think it’s going to show up good for you here. It’s not nearly as tall as the other pics I put up yesterday.

I know you’ve heard enough about corn already! Hopefully I’m through with it for a while but we’ll enjoy ours through the winter.

    oh, my family loves sweet corn on the cob but I’ve never tried freezing it. Great idea!

    Love your cabinets! I’ve never thought to buy lots of corn when it’s in season and freeze it. Where is my head?! What a good idea!

    How do you freeze it? Do you blanch it first? I love fresh corn – in fact, I have some cooking right now. But I’d love to fill the freezer with some.

    Ugh. I remember having to shuck corn in the garage. Sweet corn is good, but it’s work.

    Lucky dog. I love corn on the cob. Yummy. By the way…I have white cabinets too and we are getting ready to replace our flooring in the kitchen. WHat do you have in yours?

    Great pictures, but you’re really “corny” this week, aren’t you?! hehehe

    I have the same question as Lynne – do you just shuck it and put it in those ziploc bags or do you blanche it or do something else to it first? Inquiring minds want to know 🙂

    Fresh corn…yum…I miss that about living close to my Granny. That was a staple at the dinner table.
