Maybe this week I’ll be better about following my plan! Got a little sidetracked last week with being out of town some and next week starts a whole new set of problems, but I’ll save that for another post. Check out Laura’s place for more menus this week. Hope it’s a good one for you!
Monday………Parmesan baked salmon, green beans
Tuesday………Meat loaf, potato, veggie (didn’t get around to this one last week!)
Wednesday….church supper
Thursday…….Salmon cakes
Friday………..Foil Pack Chicken & Mushroom Dinner
weekend……I’d like to try maybe a soup with barley in it, still looking for a recipe!
We also might eat out this week, so one or more of these might not happen but it’s good to have a plan!

I love how we all use meals from the last week that we never got around to :)!! It certainly makes planning the following week much easier.
Sounds like you have a lot going on in your life. Good luck with everything!

That chicken recipe looks wonderful. I made meatloaf yesterday and (gasp!) sweetly told my husband I hoped it would last us 2 more meals! He’s a great one for snacking on real food but I want to come home and not have to cook tonight.
I hope the problems facing you this week are not overwhelming.

Gail, your menu looks great! There is a recipe on my blog for a WONDERFUL!!!! mushroom barley soup. It is REALLY REALLY good….even my kids that don’t like mushrooms LOVED this soup! I didn’t have the wine that it calls for so I subbed 2 tablespoons brandy and the rest apple juice for the amount asked for. You could also do the recipe with all white mushrooms or whatever you can get at your local market.

Yum, this all looks good. You’ll have to post and let us know about the salmon and chicken packets, I’m interested in those as well.
I have two soups that I’ve made with barley, although both use the quick cook kind. I saw a bag of pearled barley the other day in Kroger, so I can pick that up for you if you want that kind. One uses beef and portobella mushrooms and the other uses chicken and mushrooms. Both are listed on hambones.
Hope all is well, you’ll have to let me know what’s going on for next week 🙂

I am intrigued by the foil packets. I could put those together ahead of time and call my 11 YO and have him put them in the oven.

Gail, the pork tenderloin was wonderful – that is my favorite way to cook it. Even my picky eater at it – she said she wasn’t but she did!LOL

I just left Stacy’s place and told her that I’m just no good at making plans like this. Honestly, most of the time I make a quick decision about dinner. So I really admire those of you who make these menus and stick to them when you can. I imagine next week’s plans is going to be factoring in some jury duty, right? Have you already actually been chosen to sit on the jury or are you just showing up for the selection process. Seems like I get summoned constantly and do you know, neither Rob or Krissy have ever received a summons. Guess you and I are special! I seriously hope I never have to sit on a jury.
