I love soup most anytime and could easily eat it weekly. But usually we have it a bit more when the weather is cold. I’ve been gone for about a week and have done no cooking in that time! So to ease back into it, and because the weather is really cold here, I decided to make soup for supper tonight. Salmon chowder, something I really like!
Creamy Salmon Chowder
1 T. olive oil
1 c. diced onion
2/3 c. diced celery
1/2 c. diced red bell pepper
1 1/2 c. diced Yukon gold potatoes
1 medium zucchini diced
1 can fat free low sodium chicken broth, 14 1/2 oz
1/2 t. dried dill weed
1/4 t. salt
1/4 t. pepper
1 can salmon with bones, drained, 7 oz (I like to use bigger can)
1 can evaporated fat free milk, 12 oz
1 T. cornstarch
1/2 c. sliced scallions, for garnish
Heat oil in large saucepan over medium heat. Add onion, celery and red pepper; cook for about 5 minutes, mixing occasionally. Add the potatoes, zucchini, broth, 2/3 c. water, dill, salt & pepper; stir to combine. Cover & bring to boil; reduce heat & simmer until the vegetables are tender, about 20 minutes.
Empty drained salmon onto a plate & mash with a fork to break up fish & bones. In medium bowl, whisk cornstarch in milk to dissolve. Add salmon & milk to mixture in saucepan & stir to combine. Bring to a simmer; lower heat & bubble gently, stirring occasionally, until slightly thickened, about 10 minutes. Serve garnished with green onions.
I just eyeballed the oil; my store didn’t have Yukon gold potatoes so I had to use Russet….I did just one med/large potato. I thawed a piece of corn from what I put up this summer, cut it off the cob & put it in when I added the potato and zucchini……I was in a “use up stuff from the freezer” mood tonight. The salmon I used was a 14 oz. size, and the red peppers came from a jar because that’s what I had but did most everything else the way it calls for in recipe. Top with green onions.
Did you know that the bones in the salmon are edible and pretty good for you, they are a good source of calcium. It was tasty!
And, I bought myself a new soup ladle….did you notice it Stacy? It’s Oxo; I’ve decided I love that brand of kitchen gadgets!
So there you have it, really important stuff!

Yum, I would love this but would have a hard time getting Tim to eat it. Yes, I noticed the ladle, so glad you like it and got you one 🙂

Sandra over at a Diary of a stay at home mom does a crock pot Thursday and alot people do soups you ought to check it out for some ideas…..your soup sounds great!

That sounds good. I love soups too – making and eating them! Once it gets cold, that’s all I feel like eating, although Mike needs something more substantial.

This looks yummy! I love all kinds of homemade soup but the problem is my little ones don’t. So I end up making a bit pot for hubby and myself…*sigh*

I never would have thought of salmon in soup. How clever. I love salmon. And I have the same ladel. We still can’t figure out where Cameron hid our soup ladel so I broke down and bought this one. I think I have half a dozen Oxo utensils now. I love them, too, especially the ladel.

Uh oh. That’s not how you spell ladel is it. Just a minute. I’m looking it up. Nope. That’s definintely not how you spell ladel. Sigh…..
