I’ve been busy cooking and freezing things for Thanksgiving. I won’t have much left to do on Thursday, plus I’m not responsible for the whole meal this year. Several other family members are bringing dishes too so I’m sure we’ll have lots of food! My contributions will be 2 pies, homemade sourdough bread, green bean bundles and cranberry salsa. I might do roasted sweet potatoes also at some point this week. Several have asked about the salsa and green beans, so click on the “more” button below for the recipe.
I started making this a couple of years ago and some of our family members really like it! I believe it said you could serve it with turkey and the meal, which we do, but we also eat it with tortilla chips and leftover sandwiches.
Fiesta Cranberry Salsa
8 oz. cranberries
1 small apple, peeled & cored
1 small pear, peeled & cored
1 orange, peeled, sectioned & seeded
1 shallot
1 green onion
1-2 jalapeno peppers, seeded
Prepare all of the above in a fine dice and then add:
1/3 c. sugar
1 T. lime juice
1 T. white wine vinegar
Stir to blend. Cover & refrigerate 4-24 hours.
(I usually do just one pepper because we have some that don’t like hot at all. I hope some of you try it! We really like it.)
Green Bean Bundles
cans of whole green beans
1 lb. bacon
bottle of Catalina dressing
I don’t have much of a recipe for these, we just kind of wing it. I usually use anywhere from 3-6 cans of beans depending on how many people we are serving. Drain the beans, put several together to make a bundle. Cut the strips of bacon into halves or thirds; wrap the bacon around the bundles and secure with a toothpick. Put all bundles into a baking dish (9×13 is what I usually use). Then pour the dressing over and cover and bake at about 350 degrees for 45 minutes to an hour. Sometimes I take the foil off halfway or so into the time to let them brown some or I will run the dish back under the broiler if I think it needs browning some.
My sourdough bread is already made and I’ve made 2 pies; they are in the freezer ready for Thursday

P.S. That salsa would be really good if you *left out* those jalapenos!

We love these beans as well! I think we don’t use the whole bottle of dressing, though. That salsa looks good. I might have to take the ingredients and make it to use on chips…my family likes grazing and that would be perfect!
BTW, “…to grandmother’s house we go.” Except I’m going to my house WITH grandmother!

Sounds wonderful. Our thanksgiving is past so I’ll be giving the cranberry relish for Christmas!

Oh…my…it looks like you’ve been busy! Those pies look absolutely delicious! My grandmother loved to cook, and my mother loves to cook. I missed out on that disposition! I’m a mess in the kitchen! You, on the other hand, look like a pro! I hope you have a wonderful Thanksgiving!

My job is just to clean, clean clean…everyone brings food here! But I always stress a bit over cleaning everything!

Kelli, I do like to cook but it’s a good thing since I had 4 children! There was always someone to feed.
