Recently I told Stacy that I made pumpkin pancakes one morning and she wanted the recipe! I seem to be in a cooking/baking mood lately. These could be for most anytime I suppose, not just at Halloween.
So for Stacy, and anyone else who might be interested!
Light Pumpkin Pancakes
In a bowl mix:
2 c. flour
1 T. baking powder
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
2 T. brown sugar, packed
1 tsp. cinnamon
In a smaller bowl mix together 2 slightly beaten eggs, 1 1/2 c. skim milk, 2 T. oil & 1/2 c. pumpkin. Add all of this to the above mixture and stir just until moistened. Heat griddle, brush lightly with oil. Pour batter onto hot pan. Makes about 16 pancakes, depending on the size you make them.
We liked them & had them with butter and syrup!

“…had a wife but couldn’t keep her. Put her in a pumpkin shell and there he kept her very well.” Yay, for Mother Goose! I had pancakes this weekend while I was at home. Daddy makes the best but I bet that HOMEMADE pumpkin is good, too! Never had them. I must admit that I’ve become quite a pancake snob…none from the mix for me, they just don’t taste right.

Ooh, these look good! So, did you refrigerate the rest of the can of pumpkin, since this only used 1/2 cup, or bake something else, or throw it away? I always hate to waste, you know me.
I love pancakes and especially waffles, but Tim doesn’t. If we have pancakes, he usually wants eggs and bacon to go along with them, and that all just messes up too many dishes for me!
Like Claire, I love pancakes from scratch too, never use a mix. I will use Bisquick in a pinch, but I still add other stuff to my mix. These look really good!!!

I’m making Pumpkin Pancakes tomorrow, I’ve got all my pumpkin left over from the carving so last night it was Pumpkin Soup…YUMMY!!!
