Sandra at Diary of a Stay at Home Mom hosts this each week and I thought I’d start playing along. I love to use my crockpot and I’ve found some good recipes here…..made this beef roast Sunday and it was really good! Thanks for sharing it Susanne!

Southwestern Bean Soup with Cornmeal Dumplings

1 15 1/2 oz. can red kidney beans, rinsed & drained
1 15 oz. can black, pinto or great northern beans, rinsed & drained
3 c. water
1 14 1/2 oz. can Mexican stewed tomatoes
1 10 oz. pkg. frozen whole kernel corn
1 c. sliced carrots
1 c. chopped onion
1 4 oz. can chopped green chili peppers
2 Tbsp. instant beef or chicken bouillon granules or 6 cubes
1-2 tsp. chili powder
2 cloves minced garlic

dumplings:
1/3 c. flour
1/4 c. yellow cornmeal
1 tsp. baking powder
1 beaten egg white
2 Tbsp. milk
1 Tbsp. oil
salt & pepper

In a 3-1/2- or 4-quart crockery cooker combine water, beans, undrained tomatoes, corn, carrot, onion, undrained chili peppers, bouillon granules, chili powder, and garlic. Cover and cook on low-heat setting for 10 to 12 hours, or on high for 4-5 hrs.
In a medium mixing bowl stir together flour, cornmeal, baking powder, salt, and pepper. In a small mixing bowl combine egg white, milk, and oil. Add to flour mixture; stir with a fork just until combined. If soup was cooked on low heat, turn crockpot to high heat. Drop dumpling mixture into 8 mounds atop the bubbling soup. Cover and cook for 30 minutes more. (Do not lift lid while dumplings are cooking.)
Makes 4 servings.

I used kidney beans and black beans because that is what I had but I think it would be good with any of the other ones listed. I also only had regular stewed tomatoes and just added some spices to those but I think I would find the Mexican ones next time I make it. Because hubby doesn’t like spicy things, I only put 1 tsp. of chili powder…..he thought it was fine and I would add some more next time! We really liked it a lot and it was easy to put in on low in the morning and let it cook all day; did the dumplings 30-40 minutes before we ate. Good one for fall!

    Oh my goodness!! This sounds absolutely DELICIOUS!!! My family LOVES LOVES LOVES chili and LOVES cornbread and now I can cook BOTH together? Holy cow!! Listen toward “the South” this week and you’ll be hearing my famiy cheer for seconds when I make this!!

    Oooh, yummy, this looks good! I would have to leave out the chilis though, and chop those silly tomatoes up really fine. You know me! But this looks good, and I love the idea of doing the dumplings and putting them on top. So cool that you took a picture too, great job!

    Oh yeah I forgot to say, if I was cooking this for my kids or Stacy I’d have to take my immersion blender and pulverize those tomatoes because those silly people don’t like chunks of them!
    Stacy, you can’t taste the green chilis, they are mild and you don’t taste them at all once it’s all cooked.

    I don’t know how women survived without things like crockpots (or bread machines too like I mentioned a couple days ago). I live by mine. I’ll have to check these recipes out.
