Lately I’ve been trying to go through the many recipes I have collected and actually try them out! So I’m trying to do at least one new one a week. A couple of weeks ago I tried something for breakfast, French Toast Loaf. I don’t cook breakfast as much now as I used to, mostly we have cereal or oatmeal but the family likes french toast pretty good so I thought this might be a good one to try and see if it was a keeper or not……
It wasn’t hard to do:
French Toast Loaf
2 c. half and half
4 eggs
2 T. sugar
1 tsp. cinnamon
1 tsp. vanilla
1/8 tsp. nutmeg
4 c. bread cubes
Coat loaf pan with spray. In bowl combine all ingredients except bread; mix well. Stir in bread cubes and let sit 10 minutes or until liquid is absorbed. Spoon into pan and bake in 350 degree oven 55-60 minutes or until golden.
Remove from pan; slice and serve. Top slices with powder sugar and top with syrup and fruit.
I thought it was pretty good; Don was so-so on it……mine might not have baked quite as long as it needed to. I think my crew likes french toast because it can get kinda crispy doing it in the skillet so it might have been a little more like that if I had left it in a bit longer. I also halved it and used a small loaf pan to do it. I have another recipe I think I’ll try sometime that is more of an overnight french toast, so next time I get the urge to fix something more than cereal for breakfast, I might try a different version.

Looks good to me too! But, if you guys are so-so on it, I might need to just make regular french toast. I do have questions though (you know me!) – did you use fat free half and half or regular, and what kind of bread did you use? The sourdough we make, or storebought bread?

Looks good to me! I’ve got some breakfast casserole type recipes if you’re interested. One has cresent rolls and hashbrowns and the other has grits and bacon .
